Yellow Thai Curry Shrimp

1 serving 

Each serving provides 

1 leanest 

3 greens 

2 healthy fats 

3 condiments

10 raw shrimp- 1 leanest ( yield 7 oz. When cooked) 

1 cup fresh spinach- 1 green 

1/2 cup sliced mushrooms- 1 green 

1/2 cup cherry tomatoes- 1 green 

7 Tablespoons Yai’s Thai curry sauce -2 healthy fats ( I found at Costco)

2 Tablespoons (lite; canned) coconut milk- 1 condiment 

4 Tablespoons shredded parmesan cheese- 2 condiments 

Spray your frying pan with non stick spray. Add your shrimp. Cook till 1/2 way done; then add your spinach and sliced mushrooms. Add your curry sauce, cherry tomatoes and parmesan cheese and warm till spinach is wilted and shrimp is cooked.
