Shrimp Spinach Bake

1 serving

Each serving provides

3/4 leanest ; 1/4 lean

1 3/4 healthy fats

3 greens

3 condiments

7.5 oz. raw shrimp (this will yield 5.5 oz. cooked) -3/4 leanest

3 1/2 Tablespoons Trader Joe’s spinach dip- 1 3/4 fat

1 oz. low moisture mozzarella-1/4 lean

1 cup chopped canned hearts of palm-2 greens

1 cup fresh spinach-1 green

2 Tablespoons light cream cheese – 2 condiments

1 Tablespoons chopped shallots – 1 condiment

Spray a frying pan with non stick spray. On medium heat cook your shrimp 1/2 way. When it’s about 1/2 way cooked add your fresh spinach, hearts of palm and shallots and cooked till spinach is wilted. Add in your spinach dip and softened cream cheese. Warm up till all incorporated. Put in a medium size oven proof dish and sprinkle with the cheese. Broil till cheese is melted.
