Beef fajitas tacos

1 serving


Each serving provides

1 lean

2 greens

3 condiments


2 Trader Joe’s cauliflower thins -1/3 lean; 1 green

1.6 oz. thinly sliced roast beef ( deli meat ) -1/3 lean

1.3 oz. reduced fat pepper jack cheese -1/3 lean

1 cup thinly sliced peppers -2 greens

1 Tablespoon diced onion – 1 condiment

1 1/2 teaspoons Good Foods Queso – 1 condiment

1 Tablespoon enchilada sauce – 1 condiment


Heat up your thins in a nonstick sprayed frying pan till they are browned on both sides. In another pan with nonstick spray sauté your peppers and onions. To that when they are done; add you Queso and enchilada sauce and then add your meat. Heat up. Put your mixture among your 2 thins add on top with your cheese. I weighed my cheese out and it was the exact amount needed in 2 thin slices. Broil the tops so cheese melts.
