Cream Chicken Jalapeño Stuffed Chicken

Each serving provides

1 leaner

1 healthy fat

3 greens

1 1/2 condiments

12 oz. raw chicken breast

2 oz. low moisture mozzarella shredded

4 strips low sodium turkey bacon – chopped

4 Tablespoons reduced fat cream cheese -2 healthy fats

2 Tablespoons onions chopped- 2 condiments

1/4 cup fresh jalapeños chopped-1/2 green

1/2 teaspoons everything but bagel seasoning- 1 condiment

2 1/4 cups cauliflower rice – 5 1/2 greens


Preheat the oven to 350. Make a pocket in each one of your chicken breasts. In a frying pan cook your chopped turkey bacon till done. Remove from pan and add nonstick spray and cook your chopped jalapeño and onions. When they are cooked cool then mix in with your cream cheese and 1/2 your turkey bacon bites. Divide this mixture into 2 and stuffed your chicken breasts. Place them in a medium casserole dish. Top with your mozzarella cheese everything but bagel seasoning; then the remaining bacon bites. Cover with foil and bake for 45 minutes. Serve with 1 1/4 cups cauliflower rice per serving to complete this dish.
