Caprese Stuffed Portabella

Each serving provides

1 lean

3 condiments

3 greens

Portabella mushroom ( all depends on size on how many you get ) 3.0 oz.
1 cup freshly grated low moisture mozzarella cheese
2.63 oz. cherry tomatoes cut in 1/2
1 teaspoon balsamic vinegar
fresh basil
1/2 teaspoon everything but bagel seasoning
1 garlic clove minced

Preheat oven to 350.
Remove stem of your mushroom and clean out just a bit. Microwave for about 1 minute. Remove from the microwave and place on a cookie sheet. Sprinkle your everything but bagel seasoning in the mushroom cap and then add your fresh minced garlic, then top with your cheese and tomato halves. Bake approximately 20 minutes or till cheese is melted and mushroom is still firm when a fork is inserted. Remove form oven and place on your plate. Top with your fresh chopped basil and drizzle with your balsamic vinegar.
