Margarita stuffed Mushrooms

The hidden mozzarella and balsamic vinegar set these over the top

 

1 serving ( I got 5 mushrooms per serving but all depends on the size of your mushrooms)

Each serving provides; 3 greens, 1 healthy fat, 2 condiments

2.46 oz. mushroom caps

1 Tablespoon pesto

1 wedge mozzarella laughing cow chesse

2.63 oz. cherry tomatoes

1 teaspoons balsamic vinegar

Preheat oven to 350. Remove the mushroom stem and hollow out just a bit then weigh. Divide your laughing cow cheese into the amount of mushrooms you have and put in the cap. Add to that your pesto and the cherry tomato. Put in a baking dish with a little water and cover with foil. Bake approximately 10 minutes or till mushroom is done but not mushy. Put on the plate and drizzle with your balsamic vinegar and secure with a toothpick. Serve and enjoy
