Smoked Salmon Cucumbers

Easy appetizer that will have people coming back for seconds

4 servings ( each serving gets approximately 5)

each serving provides: 1 green; 1 lean; 1 condiment

8.4 oz. sliced cucumbers

8 Tablespoons low fat softened cream cheese

1 teaspoon lemon juice

1 Tablespoon fresh chopped dill

4 oz. smoked salmon 

Smoked paprika

Slice your cucumbers and divide into 4 servings. Mix your cream cheese; lemon juice; and dill together. Divide your cream cheese mixture among your sliced cucumbers. I put my cream cheese mixture in a pastry bag to make them look fancy. Top with your smoked salmon.( Each serving gets 1 oz. smoked salmon only. Smoked salmon is to be eaten occasionally because of the high sodium.) once they are all assembled sprinkle with smoked paprika.
