Salmon with zucchini ribbons

1 serving 

Each serving provides 

1 lean 

3 greens 

2 ½ condiments

5 oz. Cooked salmon – 1 lean 

3.98 oz. Zucchini ribbons – 2 greens 

¼ cup tomato sauce – 1 green 

1 Tablespoon capers – ½ condiment 

2 Tablespoons fresh grated parmesan cheese- 2 condiments

I baked my salmon at 350 in the oven till it easily flakes. I then proceeded making my zucchini ribbons. I used a vegetable peeler and peeled lengthwise down the zucchini; making ribbons. When your salmon is finished cooking, set aside. In a frying pan add your tomato sauce; capers and your zucchini ribbons. Just slightly warm up. If you cook too long your ribbons will become mush. Add in your salmon and serve. Sprinkle over top; your parmesan cheese. You have 1/2 condiment left; so I sprinkled some red pepper flakes on top.

Use a different tomato sauce if you want just make sure 1/4 cup fits into the above perimeters
