Cinco De Mayo Omelette

1 serving 

Each serving provides 

1/2 leanest; 1/4 leaner; 1/4 lean 

1 healthy fat 

3 condiments 

3 greens 

1 cup egg beaters- 1/2 leanest 

1.5 oz. 96% ground beef – 1/4 leaner 

1/4 cup reduced fat mixed Mexican cheese- 1/4 lean 

2.4 oz. Poblano pepper – 1 green 

1.66 oz. Shredded Romaine lettuce – 1 green 

2.63 oz. Cherry tomatoes- 1 green 

1 Tablespoon Mexican crema  – 1 Condiment 

3 black olives sliced- 1/2 healthy fat 

3/4 oz. Avocado- 1/2 healthy fat 

1 Tablespoon salsa -1 condiment 

2 teaspoons Queso Cotija – 1 condiment 

Brown your hamburger meat with your pablano peppers in a frying pan. In a separate frying pan divide your egg beaters into 1/2 cup each omelette. Pour 1/2 cup egg beaters into a non stick pan on high and cook; flip and cook on the other side. When those are finished set aside. Assemble your omelets. Divide your meat, cheese, lettuce, tomatoes, among the 2 thin omelets. Carefully roll. Top with your olives; crema; salsa; avocado and sprinkle with the Queso Cotija.
