Shrimp Spinach Bake

1 serving

Each serving provides

1 leanest

3 greens

2 healthy fats

2 condiments

8 oz. raw shrimp – (1 oz. short)1 leanest

1 oz. low moisture mozzarella shredded- 1 oz. lean

1 cup cooked spaghetti squash- 2 greens

1 cup fresh spinach- 1 green

3 Tablespoons Trader joe’s sour cream spinach dip = 2 healthy fats

1 Tablespoon sour cream = 1 condiment

1 Tablespoon fresh parmesan-1 condiment

Sprinkled with pepper to taste

Non stick spray

In a frying pan sprayed with non stick spray; cook your shrimp. When the shrimp is almost done add your fresh spinach, spaghetti squash, spinach dip and sour cream. Mix well then add your cheese. You want to cook till it’s warmed up and the fresh spinach is wilted. Plate up and sprinkle with your parmesan.
