Veggie Cheese Omelette

1 serving


Each serving provides


1 leaner

1 healthy fat

1 1/2 condiments

3 greens


1 cup egg beaters -1/2 leanest

1/2 cup reduced fat cheese – 1/2 lean

1 1/2 cup vegetables chopped ( I chose peppers, mushrooms and jalapeños) -3 greens

2 Tablespoon guacamole -1 healthy fat

1 Tablespoon salsa -1 condiment

1 Tablespoon Opa jalapeño dressing ( 1 condiment) OR 1/2 Tablespoon Bolthouse salsa ranch ( 1 condiment)

1/4 teaspoon everything but bagel seasoning -1/2 condiment

Non stick spray

Spray your medium pan with non stick spray and sauté your veggies with your everything but bagel seasoning. Remove from pan and spray just a bit more non stick spray in your pan and add your egg beaters. I add some of my veggies to cook in my omelette. When your omelette is cooked on one side then flipped and cooked on the other side; place your remaining veggies and your cheese and fold. Place on your plate and top with your remaining ingredients.
