Crab Quesadillas

1 serving
Each serving provides

1 leanest

2 condiments

3 greens

1 healthy fat


2 crepini egg wraps

5 oz. cooked crab ( I used the Costco one)

2 oz. low moisture mozzarella shredded

2 Tablespoons low-fat cream cheese- softened

1 cup fresh spinach

3 Tablespoons Bolthouse green goodness dressing

1/4 teaspoon Mrs Dash no salt lemon pepper seasoning

Non stick spray


Note:

When using the Crepeni wraps / 2 = 2 greens

When using the Crepeni egg thins / 4 = 2 greens


FYI- I checked all canned crab out there; this has the least sodium and has nice big chunks. You will not be disappointed. It’s a Costco item. It’s in the deli section.


Mix together your crab meat and softened cream cheese and Mrs. Dash seasoning. Use a large frying pan or I used a griddle. Spray it with non stick spray. Gently put a wrap on the griddle and add to one 1/2; your spinach, crab mixture and cheese flip other 1/2 of wrap over top. Repeat with the second wrap using the other 1/2 of your fixings. Turn on your griddle and cook on one side then gently flip over and cook on the other side. I cut them in 1/2 when one side was cooked so easier to flip.
