14 oz. raw chicken breast – 2 leaner
3/4 teaspoon chili pepper paste- 1 condiment
3 cups low sodium chicken broth- 3 condiments
1/2 jalepeno- sliced
1/2 cup chopped celery – 1 green
1/2 cup bean sprouts- 1 green
fresh cilantro
fresh basil
1/2 cup diced red pepper – 1 green
1/2 cup diced leeks – 1 green
1/2 teaspoon fresh ginger – 1 condiment ( I used ginger paste)
2 teaspoons olive oil – 2 healthy fats
1/4 teaspoon black pepper -1/2 condiment
1/8 teaspoon salt – 1/2 condiment
1 cup miracle noodles – 2 greens
Rinse your miracle noodles very good with cold water. On medium heat put 1 teaspoon olive oil in a frying pan and cook up your chicken till done. I then shredded into large pieces and set aside. Add the other 1 teaspoon olive oil to that frying pan and sauté your red pepper, leeks, celery, and jalapeno. To a pot heat up your stock, chili paste, ginger, salt and black pepper. Add your sautéed veggies to the pot and add your chicken, bean sprouts and miracle noodles. I chopped up fresh basil and cilantro to the amount 2 Tablespoons. Sprinkle in the fresh herbs stir and serve.
