1 oz. Goat cheese- 1/4 lean
3/4 cup cooked spaghetti squash- 1 1/2 greens
1 cup fresh spinach- 1 green
1/4 cup sliced mushrooms- 1/2 green
1 Tablespoon butter -2 healthy fats
2 minced garlic cloves-2 condiments
1 1/2 teaspoon fresh lemon zest- 1/2 condiment
1 teaspoon fresh lemon juice – 1/2 condiment
Steam your shrimp till pink. Put 1/2 Tablespoon butter in a frying pan with your spinach; mushrooms; garlic. When that is almost cooked add your spaghetti squash and shrimp. Toss and add your lemon zest, lemon juice and crumble your goat cheese to your vegetables in your frying pan.
