Pot Roast Soup

1 serving 

Each serving provides 

1 lean 

3 greens 

3 condiments

5 oz. Cook pot roast – 1 lean 

1.58 oz. diced fresh zucchini- ½ green 

2.63 oz. Cherry or grape  tomatoes- 1 green 

1.06 oz. raw spinach – 1 green 

1 teaspoon tomato paste- 1 condiment 

1 Tablespoon salsa verde -1 condiment 

1 cup low sodium beef broth- 1 condiment 

¼ cup rotel tomatoes- ½ green 

Add 1 cup low sodium beef broth to your crockpot on high and add your pot roast in a crock pot till done. Approximately 6 -8 hours. All depends on the size of your pot roast. Mix together your salsa verde, Rotel tomatoes, tomato paste, chicken broth and set aside. In a frying pan with non-stick spray add your zucchini chunks spinach and tomatoes. Cook till spinach is wilted. Add to your pan your broth mix you made. Cook till liquid is a little reduced. Add your pot roast.
